
Winter Superfood Salad Recipe
The secret to a savory salad on a chilly winter day? Some warm black wild rice + a soft boiled egg hot out of the pot! Mix this delicious duo up with mixed greens, probiotic-packed sauerkraut, and hydrating cucumbers for a wholesome and filling lunch or supper. To top it off, mix up EVOO, a splash of balsamic vinegar, and Green Dream for a detoxifying, delicious dressing.
I especially love this winter superfood salad when I’m busy working at home and want something quick, warming, and satisfying. The recipe only requires 5-10 minutes of simple prep, which is the perfect amount of time to get up, stretch your legs, and make something lovely for your taste buds!
Gather This:
For the Salad:
- 2 cups organic mixed greens
- 1 cup cooked black wild rice
- 1 soft boiled egg
- 4-5 slices of cucumber
- 1 spoonful of sauerkraut
- salt + pepper
For the Dressing:
- ¼ cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon Green Dream Superfood + Protein Powder
- salt + pepper
Do This:
Toss all of your salad ingredients into a large bowl. In a separate bowl, gently whisk all of your wet ingredients together until the dressing emulsifies. Add extra salt, pepper, additional olive oil, or vinegar as needed! Toss your salad + dressing, and devour!
