Philosophie Babe Recipe: Chocolate Protein Fudge Cookies

I am in LOVE with these 8-ingredient, no-bake Cacao Magic cookies from Philosophie Babe, Blair Flynn (@BalanceWithB).

I live in LA, which is currently in the midst of a heat wave, so Blair's recipe is the PERFECT choice when I want to make homemade chocolate cookies without making my house even hotter.

Deliciously dense + fudge-like, these cookie seriously taste like the middle of a freshly baked cookie just pulled out of the oven!  

Gather This:

  • 1 cup oat flour
  • 1/4 cup coconut sugar
  • 1/2 cup Cacao Magic Superfood + Protein Blend 
  • 1/2 cup almond butter or cashew butter
  • 3 tablespoons chia seeds
  • 2 tablespoons coconut oil, doesn't have to be melted
  • pinch of sea salt
  • dash of cinnamon
  • Toppings: goji berries, shredded coconut flakes, chia seeds, cacao nibs, or dark chocolate (*I used Eating Evolved Midnight Coconut bar chopped up)

 

Do This:

Add all of the ingredients to your food processor (except the toppings), and blend until a dough-like consistency forms. If the dough is too soft, add more oat flour or more protein powder. If the dough is too dry though, add more nut butter of choice.  

Once you have the desired consistency, roll into balls, flatten, and place on a parchment paper lined on a cookie sheet. Add your toppings of choice! 

Place in the fridge to firm up for about 15 or so minutes. For storing any leftover cookies, I prefer to keep them in the fridge or freezer because they keep longer, are more firm, and have more of a bite! (They will also melt fast as they have coconut oil in them.)
