
Green Dream Buddha Bowl Recipe
Bliss out during your lunch or dinner with this delicious plant-based Green Dream Buddha Bowl. The roasted sweet potato and brussels sprouts in this dish pair perfectly with sliced avocado, mixed greens, and beautiful black rice. When you add in a handful of chickpeas and toss it all up with a superfood dressing created with detoxifying Green Dream, EVOO, nutritional yeast, and miso (for that yummy burst of umami!) your tastebuds will enter a state of nirvana.
While I LOVE the sweet potato and sprouts when they're hot and freshly roasted, this recipe can also make a great packed lunch for school or work. The night before, simply roast the veggies, whip up the dressing, and then box it up for a nutritional powerhouse of a bento box that you'll be DREAMING of eating the next day!
Gather This:
For the Bowl:
- 10 brussels sprouts
- 1 sweet potato
- 4 cups mixed greens
- 1 avocado, sliced
- 1 can chickpeas
- 1 teaspoon paprika
- 1 cup cooked black rice
- 3-4 tablespoons extra virgin olive oil
- salt + pepper (to taste)
For the Dressing:
- 1 tablespoon nutritional yeast
- 1 teaspoon Green Dream Superfood + Protein Blend
- 1 teaspoon miso paste
- 3 tablespoons extra virgin olive oil
- salt + pepper (to taste)
Do This:
Preheat oven to 350 degrees. Cut the brussels sprouts into halves and the sweet potato into coins. Dress both in olive oil, salt, and pepper and then roast at 350 for 25-30 minutes until golden brown. While the veggies are roasting, whisk all of the dressing ingredients together. Once the sprouts and potato are finished, arrange all of the items in a bowl and lightly toss with the dressing.
